This is one of the easiest, yet most sophisticated little veggie treats you can make.
Trim and halve a large leek
Cover 3/4 with broth in a baking dish, and add a tsp of apple cider vinegar to the broth.
Braise at 450 uncovered in the oven until very tender
Add a teaspoon of hijiki to the hot broth when pulling it out of the oven.
Best enjoyed warm from the oven, but if you make a larger batch, it’s perfect the next day served chilled, tangled in greens.
