Almond Pastry Dough
Makes 4 cups
1 c, finely ground Raw & Activated California Almonds
1 c, activated almond flour (recipe from The Moon Juice Cookbook)
2 c, apricot kernel flour or additional ground almonds
2 tsp, pink salt
2 tsp, grated orange zest
¼ c, coconut sugar
¼ c, coconut oil, melted
1 c, pure maple syrup
In a medium bowl, whisk together the ground almonds, almond flour, apricot kernel flour, and salt. In a measuring cup, stir together the orange zest, coconut sugar, coconut oil, and maple syrup. Pour the wet ingredients into the bowl with the flours and mix thoroughly.Cover the dough and refrigerate for 30 minutes until it is firm. The dough is now ready to form into a tart shell or pie crust, or roll out into a 1⁄4 inch thickness and cut into cookies.
